If you don't want to use a polyurethane, then our only option is Rubio Monocoat Oil Plus 2C. It comes in about 50 colors and is non-toxic and zero VOC. It's made with linseed oil which has an odor for a week or so, but there are no hazardous air pollutants. Darker colors provide better UV protection. Translucent or lighter colors will not inhibit UV as well. The pure oil, without pigment, will darken the floor initially and get 10% darker over time.
