If I am coating a set of indoor steps (SPF lumber, 2 inch thick), do I need to coat the underside as well to prevent warping? Seasonal cabin, unheated in winter.

We alway recommend sealing all sides and edges. That's because moisture is everywhere and if moisture is absorbed into the bottom and not the top, then the bottom will expand and the top will not. This will cause warping.
