If I've been using mineral oil on my butcher block, would I need to deeply sand it for this to adhere? Or a light sanding? Would I need to use anything to dissolve the mineral oil? Would you recommend this or Bioshield Wood Counter finish in terms of longevity and having the oiliness not transfer to everything set on the counter (which is my problem now. Thanks!

You could use either the Bioshield Wood Counter Finish or the AFM Safecoat Naturals Clear Penetrating Oil on your butcher block. As you have an oily counter now, you need to sand that down to the raw/unfinished wood so it can take on a penetrating product. If you follow the directions you should end up with a beautiful and non-oily surface that is food-grade.
