I have used this product on my acacia butcher block countertop, and it has done well for a year, and I expect it will last longer. Will I need to re-apply in the future? If so, will I need to coat all sides again?

Just test it. Sprinkle water droplets on it to see if they bead up or sink in. If they sink in, your needing more. If they bead up, you may still be sealed pretty well. You could even try a thin coat of the oil to see if it soaks in. If it doesn't, you'll need to wipe it off but then will know it's still sealed.
