For installation in a bathroom and in order to make in waterproof, the instructions state to apply a polyurethane sealant on expansion joints. Are the expansion joints considers the outside border of the floor (against walls) or is this everywhere the planks meet? How do you apply the adhesive to ensure it is waterproof as the instructions don't answer this?

Expansion joints are anywhere the flooring meets the walls or another type of flooring. It does not mean between planks side to side. Expansion joints and/or transition strips or only required when the length of the floors exceed 60 LF in one direction or 3200 SF. Do not apply any sealant between each plank side to side as that is not necessary. You can use a caulking compound around the perimeter between the edge of the floor and the wall to prevent water from getting underneath the flooring if you wish.
