We like Naturals Clear Penetrating Oil for countertops. It's an organic food-grade product, so there is no issue with preparing food on surfaces treated with it. If the countertop has been previously treated with mineral oil in the past, you will need to establish that your counter can take on a penetrating product like this one. Try spraying some water on your countertop, if the water beads on the surface, then you will need to sand it down to the raw wood to create a substrate that the Naturals Clear Penetrating Oil will be able to penetrate and bond to. If, on the other hand, you spray water on the surface and the water soaks into the counter, then you can apply this product. Be sure to run your spray test on several areas of the countertop to establish that it is uniformly either oiled-and-needs-to-be-sanded or dry-and-okay-to-use-the-penetrating-product. If you have doubt in either direction and just want to be certain, then sanding down to the bare wood first will guarantee an even-looking coat over the entire surface.
