I am looking to seal painted countertops that have a light acrylic coating on them now. Should I lightly sand and then use Polyureseal-gloss solo and/or add the acrylac on top? Thank you in advance!

Your process sounds correct, with possibly just one alteration. If you'd like the most durable option, I'd stay with the Polyureseal product for all of the coats. If you want a different sheen you could switch that but stay with the Polyureseal. It will just provide extra durability and abrasion resistance.
