I have a latex painted vanity would like to seal it to protect it from scratches, water and mold will this work without yellowing?

It is not our top recommendation for your project. It sounds like you want something with a degree of abrasion resistance (to resist scratches), which AcriGlaze does not have. Provided the latex paint was a water-based paint, we would recommend either AFM Acrylacq or Polyureseal BP.
