I add varnish to untinted house paint, then use it as a pouring medium for artist-grade acrylic paints. Will this work with this varnish product? The high VOCs in my varnish & paint are literally killing my sensitive system.

It is a little unclear specifically what the effect is you are going for here. We don't see any issues with the substitution of AcriGlaze for varnish. We recommend testing to be sure you get the desired end result, we sell 4 oz samples of this product for testing purposes.
