I'm using this to protect unstained SPF indoor stairs in a cabin. These are 2 x 10's. Do I need to coat the underside? I don't think they should warp as they have heavy iron brackets across the ends.

It all depends on what you are trying to accomplish. If you just want to seal the surface from abrasion and make it easier to clean, you'll need three coats on the top of the treads. If you are trying to seal in chemical off-gassing from formaldehyde, coat all sides of the wood (if you only coat the top, then off-gassing will continue from the sides and the bottom of the wood).
