We are using interior plywood as a temporary floor in our yurt. Do we need to seal both sides of the sheet? The interior plywood we will use as a temp floor sits on a platform of exterior plywood and will be covered with the interior plywood, do we need to seal the exterior plywood of the platform too?

If you are addressing off gassing specifically from the plywood, then yes, you will want to cover all the surfaces, top and bottom and sides. If you skimp, then the off gassing will still have a means of escape. We suggest the AFM Safecoat Polyureseal on the floors walking surface as it has abrasion resistance. For the underside you could use AFM Safecoat Safe Seal. For the exterior plywood we recommend AFM Safecoat EXT Exterior Polyureseal Clear.
