we want to seal raw, wood floors that have been hidden under plywood their whole 30 yr life. Our goal is the best protection from high traffic & pets. Would you recommend Safecoat, Zero VOC polyurethane, or ___ ???

We would recommend AFM Safecoat Polyureseal BP as that product goes over wood well and provides the best abrasion resistance, and encapsulates any chemical preservatives that might be in the wood (like formaldehyde). By comparison, the Vermeister is more a niche product (it can only go over raw/sanded wood, period). The Vermeister is also (as of this writing 7/25/22) currently on backorder.
