Loving this product so far. However, I'm confused on what's the best protocol for sanding. I've heard that before applying oils/sealers, it's best to sand a little, as it 'roughs up' the surface a bit to allow for better oil penetration. Is this true? Also, on the official "Technical Information and Application" PDF for this product, it states "For best absorbency, all surfaces should be sanded NO FINER than #100". But this leaves the surface fairly rough - can I not sand it more finely, creating a smoother wood surface? Thanks a bunch!

Good question. Please follow the manufacturers guidelines on this. The oils will fill the pores and fill in the rough areas and after two applications there should not be much raised grain. If so, then you can sand with a finer sandpaper to burnish the surface. This is a much better way.If you were to sand with finer sandpaper initially, it would close the pores and make it harder for the oil to penetrate. Using 250 or greater after the oil has saturated, will produce a very tight closed surface making your countertop smoother and more resistant to moisture.
