Oils tend to dry slowly and depend heavily on humidity and temperature. In damp cold weather, oils dry slower. In hot dry weather, oils dry faster. Generally 1-2 days is enough. The best way to seal the floor after the second coat has penetrated is to buff the surface with a buffing machine. That will seal the surface even better, speed up the dry time and leave a lustrous patina.
