I want to apply a clear coat on a painted sink for durability. Will this product be effective?

Unfortunately, we have no clear coatings that can be submerged underwater. Our AFM Safecoat Polyureseal EXT is highly water resistant but should not be used in a sink. Probably your best bet is Petit bottom paint used on sailboats. These epoxy coatings are quite toxic, however, which is why we don't sell them.
