Will this AFM SafeCoat Polyureseal BP *prevent yellowing* if applied to new, sanded Hoop Pine Plywood (similar to Baltic Birch Plywood) over time? I want to preserve the light, natural color of the wood, so prefer not to use any stain. And will it be successful in repelling moisture, or is there another product to finish/seal with? I plan to install the plywood on the walls and ceiling of my tiny house.

It all boils down to how much direct sunlight hits the hoop pine. If that is minimal, there should not be any significant color shifts. The product itself doesn't yellow. Also, it will have some moisture resistance depending upon the levels of humidity.
