I am building a wet room with bamboo wood accents. While they won't be directly exposed to streaming water, it will be a wet environment. Can I use this product to seal raw bamboo solid stock for use on walls in a bathroom setting?

It appears that you need something better suited for high moisture exposure such as an epoxy. This product is good for surfaces exposed to light moisture as long as it dries quickly. If the room remains damp most of the time, the potential for mold and mildew is too high for this product as it contains no biocides or fungicides.
