I want to clear seal pine tongue and groove paneling that will be used for our vaulted ceiling and some walls. Is this an appropriate product to use?

You may certainly use this. Getting the proper mix with the part A and part B can be a bit trickier to get the correct proportions. You may choose to have a contractor familiar with working with 2K products apply it for you. Closely follow the application instructions.
