Most people finish an unfinished wood countertop with either AFM Safecoat Naturals Oil Wax Finish or AFM Safecoat Acrylacq. Neither are considered food grade, but both are non toxic. A truly food grade sealant is a plant based oil, such as AFM SafeCoat Naturals Clear Penetrating Oil , but it doesn't protect from stains. Keep in mind that you will want to use cutting boards and trivets for putting anything on top of the counter. You may order small samples online to test first to make certain you love the product before ordering the final amount.
