I painted a gourd with dyes & then coated it with an acrylic clear coat. I didn't like what I painted afterwards & painted the poly whey coat on outside to make it shiny to see if that helped. No. Other than it did its job of coating & shine. I'd love to be able to paint over it all & not waste the gourd. Can I paint with acrylic paint over the dried poly whey product? If so I plan to coat that after with the poly whey product. I like it very much!

No. This product was formulated to be applied to/penetrate a raw wood surface. It's not intended for vegetables like gourds. So you are very much in uncharted territory here. The PolyWhey Penetrating Stain should not be applied over any other coating (such as an oil or paint), as it needs to penetrate into the wood, which it can not do if something is in its way. So it's a "No" to all your questions.
