Looking for the right product to finish my new walnut veneer bathroom vanities. Would I use this product or the hybrid product?

For interior furniture, you would be just fine using the interior grade Oil Plus 2C product.(Nothing wrong with using the interior/exterior grade Hybrid Wood Protector on your vanities either, you could certainly go in that direction if you saw a color you like in the Hybrid that is not available in the Oil Plus 2C)
