I have a raw wood countertop and I love the light wood color and do not want it to "yellow" when sealing it. If I get the 5% white stain, will this compensate for the "yellowing"? Also, when applying the stain, will it darken if you overlap when applying it? for example, when i applied one of your darker stains on another counter, one coat was perfect, but I had to do some touch-ups and everywhere i touched-up was extra dark from the stain overlapping. Is this the same with the lighter colors?

Yes, but you will need to test this with samples to confirm the degree of compensation of yellowing. Anytime you add more pigment, it will become more opaque regardless of the color of the pigment. White which contains titanium dioxide happens to hide better than most colors.
