I am hoping to use the Rubio oil plus 2C on a birch butcher block countertop (for a home office work space, not for kitchen food prep). The unfinished birch is very light, and I would like to end up with a warm honey color. Any thoughts on what would work best?

As we can't see the exact color you are working with nor feel/interact with the wood, your best option is to get some samples of colors that look close and do your own color testing to find just the right color that you will love.I can tell you the swatches of the product we display online is what the product looks like on White Oak.
