If I would like a less stain look, what would I wipe the excess stain off with, water or mineral spirits?

While it will help somewhat, there is not much time to wipe off any excess as water-based stains soak into the wood very quickly. The darkness of the stain has mainly to do with the porosity of the wood. You can thin the stain by adding 5-10% water.
