Most people finish an unfinished wood countertop with either AFM Safecoat Naturals Oil Wax Finish or AFM Safecoat Acrylacq. Neither are considered food grade, but both are non toxic. A truly food grade sealant is a plant based oil, such as AFM SafeCoat Naturals Clear Penetrating Oil , but it doesn't protect from stains. Keep in mind that you will want to use cutting boards and trivets for putting anything on top of the counter.
