We are planning on putting this in a bathroom as well. On their install-info on the website, it states " However, in order to prevent the water to penetrate under the installed floor (which can create conditions for growing of fungus, mold or smell), a polyurethane sealant must be applied on expansion joints. Do you have anything for that? Also, when they joints I assume it means where the boards connect to each other? I am sure normal caulking around the tub etc is standard.

Nope. By "expansion joints" we mean literal gaps in the floor, such as around the perimeter, or anywhere you place a t-molding or threshold. This is only necessary if you are floating the floor. If you are doing a glue down installation this rule is not applicable.
