I am installing a cedar wall in the shower. What would be the best product to protect/waterproof the wood and keep it from graying? Looking to seal not stain.

Graying happens mainly due to exposure to UV light and there is not much in a shower. You'll need an exterior grade sealer for inside a shower such as our Rubio Monocrat Hybrid Oil or Vermont Natural Coatings Polywhey Exterior Stain. While these products are designed for exterior use, they have never been tested for inside a shower where moisture is excessive and remains humid. It's hard to predict how well they will hold up but three coats and good ventilation will certainly help.
