In a bathtub, should I grout to the base of tub? If so, should I put caulk over the grout? What about corners of the walls? Can I color match the caulk to the grout?

Assuming ceramic or porcelain tile is being used, they will both expand and crack the grout if used against the tub. Better to use caulk. Same for tiled corners of the wall. Unfortunately, we do not offer a non-toxic caulk that can be color matched to the grout.
