Is the 3mm okay to use under the Amorim Wise waterproof cork flooring installed over wooden subfloor? How about in a bathroom?

Yes. You can go up to 1/8" or 3.175mm if using an optional underlayment in your Amorim Wise Waterproof Cork Flooring. Please review the installation guidelines (link below) for more details.
