When installing click-lock floors, you get in a bind if one plank gets messed up because you typically have "broken" the click-lock seal, how do you remove the one broken piece without messing up the entire installation? If we needed to replace one piece down the line, would you have to pull up the whole floor?

There are ways to cut out the damaged piece of flooring, the only issue with doing it that way is you would have to glue that piece back into place.
