Why are drop-in sinks recommended with these instead of undermount?

Undermount sinks can and have been used but they require extra coatings to protect the edges. If the edge is not properly sealed, there can develop soiling that is undesirable. So, it can be done but using a drop in sink avoids the need to do that step.
