Yes, Marmoleum can definitely be used for countertops. This has been popular for over a century for flooring but also works well on countertops. It is a hygienic surface because the tree rosin will not allow the growth of bacteria or pathogens. This is not made for cutting so you will need to use a cutting board. Use a trivet for hot pots. Otherwise it's a beautiful, warm surface that cleans easily and is very affordable. Use Forbo L 910 W adhesive.
