I'm trying to provide some stability to an exterior bench made of dry-stacked flagstone. Would this AFM adhesive be the best for this application, or would another of your adhesives be more appropriate?

The AFM Almighty Adhesive is an indoor product. The M-1 is best for outdoors and can be used indoors as well. It was designed as an adhesive and a sealant for commercial and industrial roofing and is very popular because of its longevity and resistance to moisture, heat, freeze/thaw and all other environmental conditions. Go for M-1.
