Marmoleum has been used on countertops for decades especially in AirStreams. Marmoleum is not for cutting on (use a cutting board) but makes for a beautiful, inexpensive, warm countertop that is naturally antimicrobial.We've used it on desktops and countertops in our showroom for years with excellent results. Simply apply with their Forbo L910 adhesive and be sure to roll it out very well with a roller. We used it on top of two sheets of 3/4" birch plywood, then routered the front edge. Or you can order some stainless steel retro edging from NY Metal.
