Is there a reason not to use the regular sheet marmoleum instead of the furniture marmoleum as a kitchen countertop? It seems like the top sealer would make it more durable and stain-resistant. Is it not a food-safe surface with the sealer?

Nope, no reason. We've had a lot of customers who have successfully used the Marmoleum Sheet flooring as countertop material. This does make for a comparatively soft countertop (compared to something like quartz), so be sure to use cutting boards and trivets.
