I live in a high-rise apartment in Manhattan on the 34th floor. Do I need either of those things that you put underneath the click tiles? Will I be able to install them myself or will I need a contractor to do it? I do not have a square kitchen and I believe I would need to put the flooring underneath my refrigerator and oven because maintenance needs to be able to roll them out if they need to do a repair. Am I better off getting she flooring and can you recommend someone to install it in Manhattan that won't charge me a fortune? Thank you

Underlayment or vapor barriers depend on what is on your floor/subfloor now. Your use of the word "maintenance" makes it sound like this apartment is a rental, which may add a level of complication against doing a glue-down sheet installation, which is not something that can be easily undone.
