It is my understanding that You're not supposed to put cabinets on top of a floating floor. Would setting an island in the center of our kitchen cause this not to be able to expand and contract the way it would need to?

If the island is going to be attached to the subfloor ( screwed down to the floor) then you WOULD NOT put it under the island. It would just run up to it with the expansion gaps to allow for expansion and contraction.
