I really like the cork underlayment. Our subfloor is plywood over a crawl space so I likely need a vapor barrier. Perhaps I should just stick with Quietwalk? We plan to install floating bamboo on top.

Floating bamboo can be installed on top of cork or QuietWalk Plus. Both are non-toxic and have no VOCs. Both will provide additional cush underfoot as well as thermal and acoustical insulation. As long as your crawl space has a vapor barrier on the ground as well as on the face of the floor joists, either underlayment will work fine. However, if there is no vapor barrier installed, then we'd recommend the QuietWalk Plus as it has a vapor barrier built into it but it won't trap moisture. It wicks moisture out into the ambient air unlike other vapor barriers that trap moisture underneath them and rot the subfloor and/or create mold.
