Hi I'm looking for something I can put on top of my pingpong table to protect it when I use it for other things. Would a 5'x6' sheet of this material work as a table mat/table protector?

Sure, it would be perfect for this application. Marmoleum Sheeting comes 79" wide. It must be ordered in square yards rounded to the next whole yard. Therefore, you would need to order a piece that was 79" x 66" or 4 Square Yards (36 SF). It sounds like you would be not be needing any adhesive so you could take on and off as needed. You may need some kind of clamps to keep it in place. Should you ever want to make it permanent, you would need one gallon of Forbo L910W adhesive.
